In April 2026, all four Valley Post restaurants owned by the Pihakis Restaurant Group (PRG) were shuttered as a result of the group’s financial woes.

Located at 1012 Dunnavant Valley Road, Valley Post was home to Little Donkey, Luca, Hero Diner, and Rodney Scott’s BBQ — but all four shut down after just five months

Waldo’s Chicken & Beer is now set to fill the vacant Valley Post space in Chelsea.

Mark Waldo, a Homewood native, started the chain back in 2019. Today, the chain has grown to 27 locations stretching from Tennessee all the way to Oklahoma.

The new Valley Post restaurant, which is expected to open fall 2026, will be the fourth Waldo’s Chicken Birmingham-metro location.

The other three locations are in:

  • Cahaba Heights – Opened in 2022 near Martin’s BBQ
  • Pelham – near Pelham Civic Complex where the Birmingham Bulls play
  • Vestavia Hills – Located on Montgomery Highway 31

If you haven’t been to a local Waldo’s Chicken the casual eatery is known for its chicken tenders, rotisserie chicken, sauces, cocktails and—of—course beer.
