Fresco is celebrating its one-month anniversary! Get the scoop on Birmingham’s newest Mexican restaurant featuring made-from-scratch ingredients.

In case your Spanish is a little rusty, fresco literally means fresh in the native language.  And there couldn’t be a more perfect name for the newest addition to the Heights’ Village in Cahaba Heights.

Fresco’s whole menu centers on the idea of authentic, made-from-scratch ingredients.  Everything except the tortillas, which are sourced from the best local makers.

Fresco’s serving up delicious modern twists on authentic Mexican dishes.

What do the regulars recommend?

For an appetizer, try the Aguachile de Pulpo which is a fresh and delicious octopus salad.  Don’t be alarmed-this dish is so good that the adventurous and simple eater alike can enjoy it.

For the main event, order the carne asada which features delicious grilled flat iron steak topped with an authentic steak dressing called chimichurri.

Love Margaritas? We recommend the Paloma Rosa which is a refreshing concoction of Tequila and fresh-squeezed grapefruit and lime juice and agave nectar.  (I think this one has your name on it.)

Then to top it all off, you can’t miss out on dessert.  Fresco recommends their classic milk and cookies with an authentic twist.  The secret? Mexican horchata, which is rice milk.

They’ve just started serving brunch on Saturdays and Sundays which looks like heaven.  Here’s the menu:
