What we know about Salud Taqueria
Earlier today, co-owner Jesus Mendez announced on his Instagram page that Salud Taqueria would be opening in 2024. The late-night joint is the latest restaurant project from Jesus Mendez, Vinh Tran and José Medina-Camacho, a trio of entrepreneurs that have opened several of The Magic City’s most popular bars and eateries, including:
- Adiõs Bar
- The Louis Bar
- Unos Tacos
- The Ono Poké Edgewood
- The Ono Poké at The Pizitz Food Hall
- The Ono Poké at The Summit
- Honest Coffee Edgewood (Coming soon!)
- Honest Coffee Birmingham (Coming soon!)
The trio have enlisted help from retail business mentor Morgan Sowards and The Wadsworth Architecture Company, PC, who both previously worked along Jesus and Jose on the creation of Adiõs. Inside the restaurant, José will take charge as beverage director while Jesus’ parents, Jesus Sr. and Cristina Tellez, will share their culinary expertise as chefs.
“I’ve fallen in love with Birmingham since moving here. The community has really embraced me, my partners and my family. It’s been awesome to showcase my Mexican roots through our brands, Unos Tacos and Adios. With Salud, we aim to appease those hungry for a breakfast burrito and late night taco cravings. My parents love to cook and we can’t to share our family recipes. With Jose Medina-Camacho as a partner and running our beverage program, we have the perfect combo!”

Salud Taqueria will be located inside the Webb Building, a historic building in downtown Birmingham that was recently redeveloped by a partnership between Ladd Real Estate, ARC Realty, Stewart Perry and David Baker Architects. Located on the southwest corner of 20th Street and 2nd Avenue North, the Webb Building was built in 1871—making it one of (if not the) oldest surviving buildings in downtown.
