Meet the minds behind Adiõs

Adiõs is the brainchild of two hospitality industry veterans, José Medina Camacho and Jesús Méndez. Both born in Mexico, Camacho and Méndez immigrated to Alabama in the early ’90s and made their mark on Birmingham’s food and beverage scene. Jesús owns and operates Honest Coffee Roasters, Unos Tacos and The Louis Bar in The Pizitz Food Hall while José has worked at Little Donkey, Octane, The Marble Ring and, most recently, at Automatic Seafood & Oysters.

“Adiõs is something that José and I have been wanting to do for a long time. Our goal is to introduce new ingredients and flavors to guests while welcoming them into a place that immediately feels like home. Hospitality and caring for others is at the root of everything we do, so we want this to be a space for people to celebrate, grieve, meet new friends or just sit at the bar and tell us about their day.”

Inside the bar—designed by Morgan Sowards—you’ll find a cozy setting accentuated by large tropical plants, antique stained glass from a chapel in Mexico and prints from Oaxacan artist @arch.oax. In addition, the bar features Día de los Muertos ofrenda to offer patrons a place to celebrate the life of lost loved ones year-round. José and Jesús intend for Adiõs to be a place where guests can experience the ingredients, music and art that make up the vibrant fabric of Mexico City.

At Adiõs, you’ll find familiar cocktails with a twist thanks to Mexican-made-and-grown spirits, such as:

  • Amour a la Mexicana: Cognac, Cynar, Mexican coffee-Cola syrup and whole egg
  • Diamonds in the Rough: Old Forester 100 proof, Dom house mix and lime
  • Fo-Swizzle: Cappelletti, strawberry, rhubarb, lime, orange, Angostura, salt and mint
  • Thirteen Heaven: Joven Mezcal, Pasubio, blueberry, Epazote, lime and tonic
