Chicken lovers, mark your calendars—Waldo’s Chicken & Beer is launching a new Alabama location along U.S. 280 in Chelsea early next week! Located at 1012 Dunnavant Valley Road in the Valley Post development, the new Waldo’s is set to celebrate its grand opening on Tuesday, September 29.

Founded in 2019 by Mark Waldo—a Birmingham native and graduate of the University of Alabama—Waldo’s Chicken & Beer started out in the Germantown neighborhood of Nashville; today, the chain operates 35 locations in 10 U.S. states; including five in Alabama:

If you haven’t yet eaten at Waldo’s, expect a menu packed with familiar Southern comfort foods and fresh, never-frozen chicken prepared two unique ways: traditional pickle-brined Southern fried and slow-roasted rotisserie. And let’s not forget the “& Beer” portion; each Waldo’s has a full bar serving up draft beer, cocktails, frozen drinks and more.

Earlier this year, Waldo’s announced plans to open it’s fourth Birmingham-area location at Valley Post, a family-oriented entertainment district created by local developer Michael Mouron of Capstone Real Estate Investments. Initially built around four popular restaurant concepts operated by the Pihakis Restaurant Group (PRG), Valley Post briefly closed in mid-2026 following PRG’s highly-publicized financial troubles.
In July, beloved Birmingham BBQ staple SAW’s BBQ announced plans to bring its signature Carolina-style barbecue and famous Alabama white sauce to the Valley Post development.
The new Waldo’s will be the first restaurant to open at Valley Post, taking over the space previously home to Little Donkey. The restaurant’s grand opening will be held on Tuesday, Sept. 29.
