Redemption by Straight Mountain Foods opened this week off Highway 11 in Trussville. 

In March 2026, Straight Mountain Foods, a popular food truck and catering business, announced it will launch its new restaurant at 8885 Gadsden Highway.

Why the name Redemption?

Why is the restaurant called Redemption? 

“That name isn’t just something that sounded good on a sign. It represents the road we’ve walked to get here. 

“Some of you remember when our first restaurant closed due to personal circumstances. A couple years later our food truck was destroyed in a fire. Those moments could have easily been the end of the story. But they weren’t.

“Because every time we got knocked down, this community showed up. You kept ordering. You kept sharing our posts. You kept telling your friends about us. You stood in line at the trailer, booked us for catering, and supported Straight Mountain Foods and Straight Mountain Catering in ways we will never forget.”

Redemption: Comfort food and creative chaos

If you have ever been to the food truck, you have experienced some of the best burgers, wings, brisket and sides like loaded potato salad and smoked mac and cheese in the Birmingham metro area.

What should we expect from Redemption? According to a June 25 Facebook post — comfort food for lunch (meat and two) and chef creations in addition to some “Southern comfort creative chaos.”

For example, two scrumptious dinner menu items they posted this week include:

  • Red Snapper Oscar with veggies
  • 10oz. Porterhouse pork chop with garlic parmesan mashed potatoes and brown butter glazed carrots

  • Monday-Friday: 11AM to 8PM
  • Saturday: 7AM to 8PM
  • Sunday: 7AM to 3PM
