New restaurant coming to Montevallo, Indigo Cafe and Bar

Indigo Cafe and Bar, an elevated American food spot, is coming to Montevallo’s Main Street. What makes this new addition unique? We talked to the owner to find out.

Bringing Indigo Cafe and Bar to Montevallo

Indigo Aulbach went to culinary school in both San Francisco and Minneapolis, but for the last 10 years, he focused on a career in nursing.

“My daughter was in grade school at the time and the restaurant business was really taxing on being a parent.”

After a few years of discussing plans and dreams, Indigo’s daughter moved to the University of Montevallo with Indigo following shortly after her. He worked at Children’s of Alabama until eventually buying a house in Montevallo to live there full time.

“The first time I came into town I was taken aback. All the Christmas lights were up on Main Street and it was just beautiful and cozy.”

In the midst of the city’s beauty, Indigo recognized a need for a variety of restaurants. He discovered an empty space on Main Street and the rest fell into place.

Indigo Cafe and Bar is inspired by artists, adventurers + misfits

Indigo said that his vision is inspired by the great American artists, adventurers and misfits of the 20th century. Basically, think Billie Holiday meets Anthony Bourdain meets Ramones.

The food brings people in, but the warm and inviting atmosphere keeps them coming back.

“It’s less about the food and more about the experience of dining with someone. It’s the reason I became a chef and it’s the reason I became a nurse—to make people feel good; to make them feel better when they leave than when they got there.”

An expected opening date of November 15

“God-willing,” as Indigo stated, Montevallo’s new addition will open for business on Wednesday, November 15.

Open for breakfast, lunch and dinner Monday-Saturday and brunch on Sunday, the expected hours for the restaurant will be:

  • Sunday: 10AM-4PM
  • Monday-Thursday: 7AM-10PM
  • Friday-Saturday: 7AM-Midnight
