A little under a year ago, local entrepreneurs Jesús Méndez and José Medina Camacho announced their newest concept—a bar & late-night restaurant dubbed Salud Taqueria.

Salud Taqueria will officially open in downtown Birmingham on Monday, October 21—read on to learn more + what to expect.

Open for lunch and well into the evening Monday through Saturday, Salud Taqueria will be a welcome addition to Birmingham’s food scene whether you’re a night owl or grabbing a quick bite during your lunch break.

Specializing in authentic Mexican food, tradition and hospitality in a taqueria setting, Salud Taqueria is the latest concept from Jesús Méndez and José Medina Camacho—two local entrepreneurs behind:

  • Unos Tacos, a taco spot in The Pizitz Food Hall
  • The Louis, a bar at The Pizitz Food Hall
  • Adiós, a cocktail bar on 1st Ave. N
  • And more!

“I’ve fallen in love with Birmingham since moving here. The community has really embraced me, my partners and my family. It’s been awesome to showcase my Mexican roots through our brands, Unos Tacos and Adios.

Salud Taqueria

Located in the historic Webb Building (built 1871), Salud Taqueria was created as a heartfelt ode to Jesús’ parents—Jesús Mendez Sr. and Christina Tellez—who will both be involved as advisors in the day-to-day restaurant activities.

The establishment will offer a sizable bar and flexible seating for up to 46 guests in the dining room of Salud, while passerby can see the tortilla-making process from start to finish through a floor-to-ceiling window into the kitchen.

What’s on the menu at Salud Taqueria?

Salud Taqueria’s menu is centered around the quality ingredients and recipes that Jesús grew up eating as well as Christina’s experience working at taquerias in Puebla, Mexico before coming to the United States.

Tacos will be served on handmade masa tortillas and tortillas de harina with four proteins and one vegetarian option:

  • Jesús’ family’s carne asada (using traditional cuts like diezmillo de res)
  • Seasoned and grilled pollo asado
  • Suadero (brisket) simmered in aromatic herbs
  • Trompos-style al pastor marinated in Jesús’ family’s adobo recipe from Puebla
  • Nopal, the pad of edible cacti found in Mexico

To top it off, tacos are complemented by house-made salsas verde and borracha. In addition, Salud Taqueria will offer burritos, quesadillas and tortas—with a brunch set for weekends coming soon.

Salud Taqueria will offer a beverage program built by José Medina Camacho to complement each dish on the menu. The beverage menu will include:

  • Seven house cocktails including the Salud Margarita—inspired by the flavor of a taco al pastor (made with Reposado or mezcal, pineapple, Ancho Reyes, agave and lime)
  • A rotaing array of house classic cocktails inspired by the large variety of refreshing aguas frescas
  • Michelada service
  • Mexican beers
  • Natural and low-intervention wines
