A new Mexican wrestling-themed taqueria has entered the ring—and the menu is a body slam! Bham Now interviewed the husband and wife duo behind Springville’s hottest new spot: Ay Güey Taqueria & Bar.

Located at 39 Springville Station in Springville—about a half hour’s drive from downtown Birmingham—Ay Güey is a new taqueria and bar concept opened by Arturo and Diana Flores.

Arturo—who hails from Guadalajara, the capital of the Mexican state of Jalisco—wanted to create a restaurant where its primarily-American audience could experience authentic Mexican food.

“We have a lot of customers come in who have never had an authentic taco before, and this is the first time they’re trying it. As soon as they try it, they say, ‘Oh my God, I can tell the difference!'”

When you step into Ay Güey, the first thing you’ll notice is the Mexican wrestling theme—it’s everywhere, from the walls to the masks Arturo, Diana and their employees wear.

“Arturo loves the Mexican wrestling culture and seeing the luchadores fight on TV, so we had to fight a way to incorporate that into our restaurant.

Our customers love it—every time a kid steps in, they are super excited to see Arturo come out with a mask. The kids will put on masks too and take pictures with Arturo—it’s just something new and fresh!”

What’s on the menu at Ay Güey?

Ay Güey specializes in authentic Mexican street tacos—a staple from Arturo’s hometown.

“Traditional street tacos are pretty much the #1 thing where I’m from—but up here, most street tacos are made just like a normal taco.

I’m making street tacos the right way, with fresh corn tortillas made every day inside the restaurant filled with the best carne asada and al pastor you’ll find.”

Each street taco at Ay Güey is made with those fresh corn tortillas, topped with onions and cilantro and comes with your choice of meat:

  • Carne asada (steak)
  • Chorizo (Mexican sausage)
  • Campechano (steak and chorizo)
  • Pastor (marinated pork)
  • Carnitas (pork)
  • Pollo (chicken)
  • Lengua (cow tongue)
  • Cabeza – cachete (cheek)

Ay Güey also offers build-your-own plates, specials, kids meals and a drink menu.
