Last month, we reported that Bandit Pâtisserie planned to move up the block from its former storefront up 1st Ave N to a larger retail and production space. This Saturday, you’ll finally be able to check it out for yourself.

We sat down with owners Kristen Hall and Lacy Triplett to learn more about the new space, some exciting menu additions and more.

Bandit is expanding

Since the pandemic, Bandit operated its bakery with separate retail and production spaces.

Now, with a new location five times the size of the previous one, they can finally bring all operations under one roof.

“This really feels like a moment to bring back what we really wanted, which was a space where pastries were made and enjoyed all in the same space. We do a lot of wholesale work and have wonderful pastry partners in the community, but we don’t always get to see people actually enjoying that chocolate croissant or Pop Tart.”

Hall unofficially founded Bandit in 2013 in her house in Crestwood, when she started teaching her daughters to bake and delivering the pastry creations to other neighborhood residents. They would ring the doorbell and run away, eventually becoming known as the “baking bandits”.

Since then, the bakery has become a staple in the Birmingham community.

At the end of 2024, Hall sold her stake in The Essential to dedicate her focus to Bandit and Le Fête. To support management and production, Lacy Triplett joined the Bandit team as Kristen’s right-hand-man.

“It’s been a wild adventure, of course, but Lacy Triplett joined last year as my partner, and that’s been a really wonderful thing for us to have another person driving who Bandit is and what Bandit is going to be. This new space in particular just has a really great energy and really great light.

I’m really happy with the way the design turned out. It’s giving us the opportunity to really grow and have space for people to enjoy what we’re making.”

What’s new at Bandit?

One of the most significant changes at Bandit is its expanded hours—the café will now be open seven days a week instead of just four. That means you (and me) can satisfy your pastry or croissant cravings any day of the week.

So, what else is new at Bandit? If you’re a long-time fan, some old favorites have returned to the menu.

Here’s a look at some additions you can expect:

  • Egg frittata (mushroom or bacon + cheddar)
  • Daily sandwich starting at 10:30AM every morning
  • Vegetarian foccacia bread
  • Fresh loaves like brioche, sourdough + baguette

Plus, there’s even a Little Red Print Shop vending machine, featuring artwork by local artist Jessica Leitch.
