When I first saw Con Huevos’ sign pop up at the former Straw Hat location on Main Street in Trussville, I expected a small dive where you could grab a generic taco to go or a quick and easy meal with a friend. Wow, was I wrong—and delightfully so.

Con Huevos is a true gem with beautiful Mexican cuisine wrapped in a cheerful space rich in vibrant colors and upbeat decor.

With Día de los Muertos ahead on November 1, you’ll also find some inspiring artwork, flowers and more.

If you typically opt for Mexican cuisine for dinner, you’ll need to rev up your cravings much earlier in the day to eat at Con Huevos. Open Tuesday-Saturday from 7:30AM-3:30PM, the restaurant caters to an earlier breakfast/lunch crowd.

The restaurant’s menu even states it’s “the perfect way to start your day.”

Also, “con huevos” in Spanish means “with eggs”, which is a main ingredient on the restaurant’s breakast menu.

Here are a few menu items to consider when you visit Con Huevos in Trussville:

• Fideo Soup: Fideo pasta in a chicken and tomato broth. $4.80
• Huevos with Mole: 2 eggs, 2 fried tortillas, beans and mole sauce. $12.50
• Milaneza Tortas: Bolillo bread filled with milaneza (breaded steak), cheese, beans, tomato, avocado and onion. $12.50
• Tacos dorados: 4 fried tortillas filled with your choice of protein (meat or chicken), sour cream, fresco cheese and lettuce. $14.30
• Avocado and Tuna Salad: 1 avocado cut in half and filled with tuna and cilantro sauce. $9.88

Bring the kids with you—they’ll love the mini pancakes and quesadillas. 

Drinks and cocktails are available, too, with options like the Bloody Maria made with mezcal.
