Just say ‘za! Slims Pizza + Bar headed for Crestline Village

What do you get when a professional photographer and a prominent chef team up? A delicious creation, of course. Say hello to Slims Pizza + Bar—coming soon to Crestline Village.

According to the BBJ, the pizzeria is the venture of two renowned locals—former prominent Chef de Cuisine at Bottega John Rolen and famous photographer Miller Mobley.

That’s a whole lot of talent behind one project. I smell a winner…and soon, some incredible pizza.

What’s the restaurant all about?

In one word, pizza! The restaurant will feature:

  • New York-style pizza
  • Cold beer
  • Wine and cocktails

The atmosphere will be comfortable, affordable and easy going. Sounds like my kind of place.

What’s interesting is that Slims Pizza + Bar has no plans to follow the most current pizza cooking trends. Instead of using wood-fired brick ovens, they’ll be going old school.

Mobley told the BBJ, “We’re reverting back to the way most New York pizzerias do it with a triple-decker oven.”

What’s so extraordinary about New York-style pizza? It’s all about that crust. 

While many Southern pizza joints make it soft and doughy, Northern pizzerias serve it up with that well-done and satisfying crunch. So. Good.

There are not many visuals to share with you currently since the restaurant is just in the beginning stages. But, word on the foodie street is that it will be located at 65 Church Street in Crestline Village and has a hopeful opening date of spring 2021.
