Nothing says fall better than apple cider donuts. Yum! So grab a donut pan and scoot on into the kitchen because this baked apple cider donut recipe is both easy and delicious.
Baked Apple Cider Donuts
Easy, Fun Fall Donuts
Ingredients
- Batter
- tablespoons unsalted butter melted
- ½ cup light brown sugar
- ½ cup granulated sugar
- 2 eggs
- 2 teaspoons vanilla extract
- ¾ cup buttermilk
- 2 cups apple cider reduced to ¾ cup
- 3 teaspoons baking power
- 2 ½ cups all-purpose flour
- 3 teaspoons cinnamon
- 2 teaspoons nutmeg
- Pinch salt
- Topping
- 6 tablespoons unsalted butter melted
- ½ cup granulated sugar
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
Instructions
- In a large bowl, whisk together flour, baking powder, pinch of salt, cinnamon and nutmeg. Set aside.
- In separate bowl, mix melted butter and sugars together until smooth.
- Add eggs and vanilla and stir until completely mixed.
- Pour in buttermilk and apple cider and mix until smooth.
- Stir in flour mixture and mix until just incorporated. Don't over mix or donuts will be tough.
- Pour batter into prepared pan(s) filling each well about ¾ full.
- Bake for 12-15 minutes or until the tops are firm and spring back slightly when you touch them. Don't over bake or donuts will turn out dry.
- When done, remove donuts from oven and let cool in pan(s) for 5 minutes. Then carefully remove and place on wire rack to cool.
- While the donuts cool, prepare the topping mixture. In a small bowl, melt butter in the microwave (don't burn!). Set aside.
- 10. In a separate bowl, mix cinnamon and sugar together. Set aside.
- 11. Once donuts are cool enough to be handled, dip the tops only into the melted butter, then quickly into the cinnamon sugar mixture. (Don't add extra of topping mixture, otherwise they will be too strong and you will have a flavor-overboard situation on your hands!)
Notes
Prep Work
- Preheat oven to 350 degrees
- Spray donut pan(s) with cooking spray (set aside)
- Reduce apple cider
- Pour apple cider in a small saucepan
- Simmer on low-medium heat for 15-20 minutes (or until cider reduces down to ¾ cup)
- Once reduced, set aside to cool
