Roll Cajun Boudin bringing dining, grocery, coffee + bakery to former spot of Iron City Grill

When Matt Coltrin first started making boudin in Birmingham, he promised himself one thing: “Never compromise the Cajun.”
What started as a small boudin business in 2024 turned into a his own rolling restaurant, and now, it’s going a step further.
Roll Cajun Boudin has plans to move into the old Iron City Grill attached to live music venue Iron City Bham.
Its new space, which will be located at 2208 6th Ave S, will boast:
- Sit-down Cajun dining with a full dinner menu and live music
- Full-time Cajun grocery with hard-to-find Louisiana goods
- A custom boudin and sausage bar
- A full bar with custom cocktails
- A coffee shop and bakery with king cakes and cheesecakes
In addition to the new brick-and-mortar location, the Roll Cajun food truck and catering business will still be fully operational.
“We haven’t ‘made it.’ We’re still grinding. We’ve been desperate for more space just to keep up with operations. But somehow, some way, the good Lord, a whole lot of hard work, and your support opened a door that feels too perfect to be an accident.”

Coltrin said in a social media announcement that the plan is to open in February or March depending on permits, inspections and “all that fun red tape.”
“Everything you’ve seen from Roll Cajun has been built the slow, hard, organic way—one plate, one event, one crazy idea at a time. If I have to eat ramen or leftover boudin balls for the next couple years to make this work, then pass me a fork and a little hot sauce, because I’ll do it with a smile. This place matters that much to me and my family.”
Until then, folks in search of good Cajun home cooking can find the Roll Cajun food truck all around town — on its social media pages, a schedule is posted ahead of time, so stay tuned to see where it is hitting up.
