A brand-new cocktail bar backed by two longtime local bartenders is set to open soon in Southside! We met with owners Michael Tobey and Phillip Crowe to learn more about Bygones Cocktail Bar.
A new cocktail bar is coming soon to Birmingham’s Southside

For owners Michael Tobey and Phillip Crowe, the quickly-approaching opening date of Bygones cocktail bar couldn’t come soon enough—in fact, it’s been a project five years in the making.
“We met while working in the cocktail scene downtown, and it was those late nights that led to Phillip and I brainstorming and coming up with ideas for our own place one day.”

When an opportunity for a bar concept at a new development popped up, Michael and Phillip jumped at the chance. The space was located in a historic building at 210 22nd St. S—near the award-winning Birmingham District Brewing Co. and next to the recently-opened Painted Lady hotel.
The historic building, once a ferrier’s workshop, provided its own unique challenges—and opportunities.
“This building hasn’t been modified much since it was built in 1890. Instead of shying away from the rough aesthetic, we embraced it and added soft touches like green velvet booths and brass hardware.”

Michael and Phillip’s finished product is dotted with historic details impossible to recreate; a groove in the stamped concrete floor marks where a swinging door once stood, and a supporting wooden post is worn away where bored horses gnawed over a century ago.
“Every detail is intentional, starting from the moment our doorman opens the door to let you in. The lighting, music, glassware and the way we craft each cocktail—everything is designed with purpose. We want our guests to feel like they are exactly where they’re supposed to be.”

Despite delays due to the pandemic and permitting associated with a historic structure, Bygones is nearing the finish line—in fact, the cocktail bar’s city permits were passed this week.
“Somewhere in between working on our wine menu and cocktail ingredients, we realized that we’ve finally arrived at the ‘fun part’ of opening a cocktail bar.
We had our first staff meeting this week, and we feel really great about the team we have. For us, it’s always been about the people; so to finally get our people working together is a big step.”

Excited to visit Bygones? Don’t worry, you won’t have to wait long. Michael and Phillip are aiming to open Birmingham’s newest cocktail bar by late April/early May.
“Bygones will be a cocktail destination, but we believe in meeting our guests where they are. Whether you want a Chilton County Blackberry June Espresso Martini or just an ice cold beer, we’re here for you.”
