For the last decade, Trussville resident John Finney worked under one of Birmingham’s most awarded chefs, Frank Stitt. This December, he’s opening his own restaurant—Henrietta’s Deli is coming to 120 S Chalkville Road in the Trussville Entertainment District.

We sat down with John to learn more about what to expect at this exciting new spot.

What to expect at Henrietta’s Deli

As former chef de cuisine at Chez Fon Fon and sous chef at Highlands Bar & Grill, it’s safe to say John knows his way around a kitchen.

Named after his grandmother, Henrietta’s Deli will serve a variety of crafted sandwiches, salads and charcuterie. Plus, there will be a retail area in the deli where guests can purchase locally-made meats, honeys, spices and more.

As far as the menu at Henrietta’s, John has some tasty creations to share, including:

  • Prime Beef Tartine—10-12 hour smoked New York strip steak, horseradish mayo, lettuce, pickled onion
  • Chicken Cordon Bleu—Fra’mani ham, fried chicken breast, swiss cheese, Hinkel’s Bakery baguette
  • Adult Grilled Cheese—swiss, cheddar, goat cheese, bacon jam, fried egg

John, a father himself, has also created some kids menu items that will please even your pickiest kid.

“Being a father of two kids and knowing how picky they are, we’re going to be serving a homemade uncrustable sandwich filled with peanut butter, grape jelly, raspberry jam or Nutella.

Also, a sort of ‘upscale’ lunchable and some type of grilled cheese as well.”

Coming soon to Trussville

Located in the former home of Kemp’s, Henrietta’s Deli plans to open sometime in the next few weeks.

According to John, he’s excited to bring something new and exciting to Trussville’s growing culinary scene.

“There is so much food that is here in Trussville, but there’s nothing like what I’m about to do. I totally feel that Trussville deserves to have some good food, and that’s been my main focus—bringing good food to a city that completely deserves it.

Everything that we’re going to serve is going to be either made in house or specifically picked to entice people to eat. I want to be able to offer anybody that comes in a great meal and make it last and be memorable.”
