Meet Josh Jackson, Rojo’s bartender bringing the best of Birmingham’s nightlife to Highland Park.
“Josh, he’s young, but he’s very professional about his cocktails. He takes them seriously, and wants to constantly be bettering his skills. He is always keeping the bar lively with great ideas.”

Here is an excerpt from Bar Boss about Josh Jackson:
What is your favorite thing about being a bartender?
“Most of the time, I feel as if I’m hosting someone at my house and I love making them feel welcome.”
If you could have only 3 ingredients at your bar, what would they be?
“Mint, orange, sugar cubes.”
What would you do with the $10,000?
“With $10000, I would travel from Southeast Asia to the UK and collect recipes on regional cocktails and foods. Eventually, I plan on opening my own restaurant and having a few items on the menu that are rotating.”
Laney DeJonge, Rojo’s co-owner, let us know Josh is bringing new hours and drinks to the restaurant starting this December.
“Rojo used to keep our bar open every night until midnight before COVID. Now Josh is starting it back up on the weekends in December. He’s keeping the bar open till midnight or after on Friday nights. And he’s going to have a special holiday cocktail for each of the Friday nights. Plus he’s going to be making $8 specialty cocktails on Tuesdays and Wednesdays.”
