If you are new to the south, or just Birmingham for that matter, many local Bar-B-Que joints pride themselves on this saying. Vulgarity is not in question here, you know we southerns tend to have our funny sayin’s.
On August 15th, Co-owners Michelle and Michael O’Connor opened their first Brick and Mortar restaurant to give their “Swamp Monster” an established home.
Growing up in New Orleans, Mr. O’Connor has been serving up good Cajun inspired Bar-B-Que for years – when the demand from friends and family grew, he decided to monetize the brand behind his deep southern roots.
“Honestly, we were just trying to enjoy some time with family,” Michelle O’Connor said. “But word of mouth is really how it grew. We got some good, loyal clients that liked the product, sold the butt to friends and then they would have people over, and you know, there you go.”

Unique Dishes & Feel
- Cajun Potato Salad with Creole Mustard
- “The Pirogue” – 100% Kobe Beef hot dog – on top – a Gambino’s French Bread
- Pork Rings
- Red Beans and Rice – only place in Bham to serve such a dish
…if you only had time to try one item off the menu, she (co-owner Michelle) said she would definitely have to recommend the pork.

Clearly the New Orleans flavor of service and dishes are what makes this unique joint stand out.
Birmingham continues to grow within the food scene with unique local dishes from places like Tropicaleo, Melt Bham, and Fancy’s on 5th.
